Recipe: Vegan Vanilla Iced Latte

I’m not a natural coffee lover (I’m a tea girl myself), but there have been days where I’ve REALLY needed one – what can I say, I’m a new mother after all. But I’m still unsure of what kind of coffee I’m after, being a new coffee-drinker. Generally, I go for Caramel Lattes. However, when I saw this AWESOME recipe for a Vegan Vanilla Iced Latte, I know I HAD to share it. Ruth from Pea Fritters is an awesome mumma who shares allergy-friendly recipes for families, and I’m so thankful that she agreed to share this amazing recipe with us – so enjoy!
Any coffee lovers in the house? Hello there! I don’t know about you, but since becoming a mum, coffee has become both a luxury and an essential! Luxury if you get to drink it while it’s still hot. Essential to help get you through the day parenting a little tornado whilst only having had a handful of hours sleep.But it can be hard to find a delicious coffee when you can’t drink dairy. Soy milk just isn’t the same and some of us can’t do nuts either! This Vegan Vanilla Iced Latte ticks all the boxes! Coffee, check. Dairy free, check. Absolutely delicious, big check!!
My baby boy was not a very happy or pleasant baby. He spewed all the time. He cried all the time and he left me feeling pretty useless and a bit depressed really. I had no idea what to do with him! He screamed in the car, he wouldn’t lie down, I had to wear him in the baby carrier for up to 9 hours every single day just so that he would sleep and stop crying. 
At 1 month old, he was diagnosed with an upper lip and tongue tie which needed intervention to be released. He had them both lasered at 2 months of age, which was a very traumatic but worthwhile experience. The spewing and the crying got a little less, but it was when I started to cut dairy out of my diet, that I started to notice a HUGE shift in my little boy.
vegan vanilla Iced latte 2He changed within a week of me stopping dairy. People were noticing where ever I took him. “Oh he’s so much more calm!” “he’s such a happy boy now! What’s changed?”. And I’d tell them, I’ve cut out dairy. They were amazed!
But with cutting out dairy, I had to say farewell to some of my most favourite things: milky coffees, croissants, buttered bagels and pizza. Boy was it tough to start with. But along the way, I have discovered there is an entire would of food out there which is so delicious, healthy and fun that I really don’t miss out on anything these days!

Vegan Vanilla Iced Latte


  • 1 shot of espresso
  • ¾ cup non-dairy milk of choice (I used Coco Quench)
  • a fresh date
  • 1 tsp vanilla essence
  • 1 tsp maple syrup
  • handful of ice 


  1. Place all ingredients into a blend or tall container to use with a stick blender.
  2. Blend until well combined.
  3. Serve over ice.
