“Crap, people are coming over!” Eggless Cookies

Or better known to ‘normal’ people, as Oatmeal Chocolate Chip Cookies (No Eggs). I found this recipe HERE when I madly ran around trying to whip up something before my friend arrived. I didn’t know what to prepare! The only reason I went with an eggless recipe was because, let’s face it, we had no eggs (or hardly anything else for that matter!). This recipe was quick, easy and quite delicious! I hope you enjoy it as much as my friend and I did!

Ingredients
  1. 1/2 cup of butter or margarine
  2. 90g brown sugar
  3. 30g white sugar
  4. 1/2 teaspoon vanilla extract
  5. 180g all-purpose flour
  6. 1/4 teaspoon salt
  7. 1 & 1/2 teaspoon of baking powder
  8. 1/4 cup boiling water
  9. 1 cup quick-cooking oats
  10. 1/4 cup raisins (optional)
  11. 3/4 cups chocolate chips
Instructions
  1. Beat butter or margarine, sugars and vanilla until light and fluffy.
  2. Add flour and salt, mix well.
  3. Dissolve baking soda in boiling water (in a separate bowl) and add to mixture.
  4. Stir in rolled oats, raisins and chocolate chips.
  5. Drop by teaspoonful onto ungreased cookie sheet. Bake at 175 degrees C (350 degrees F) for 10-12 minutes.
