Recipe: Lactation Cookies

One of the lovely mums from our mother’s group shared this recipe for lactation cookies with us, because we were all talking about milk supply (and the ebbs and flows (ha!) that we go through). I have been given permission to share the recipe, and hope that you enjoy it as much as I have – they are DELICIOUS!
Ingredients (Photo # 1):
* 1/2cup butter (*virgin coconut oil also good)
* 3/4cup firmly packed brown sugar (*1/2 cup if you don’t want it so sweet)
* 2-3tablespoons water (depends on how moist you prefer cookie)
* 2 tablespoons flaxseed meal (see photo #2 – Apparently ‘Flaxseed meal’ is also known as ‘Linseed meal’. True story. If you have absolutely no idea like me, hope that helps!)
* 1 egg
* 1 tablespoon vanilla
* 1 teaspoon cinnamon (optional)
* 1 cup whole meal self raising flour (*I just use white self raising)
* 1-2 tablespoons Brewers yeast (do not substitute!)
* 1/2 teaspoon salt
* 1 1/2 cups oats (steel cut or rolled)
* 1/2 cup ingredients of your choice ( chocolate chip/raisins etc)
* 3/4 teaspoon (approx.) baking powder
Steps (Photos #3-9):
1. Preheat oven to 170 degrees Celsius
2. Mix the flaxseed meal and water and let sit for 3-5 minutes (photo #3).
3. Beat butter, brown sugar well (photo #4).
4. Add egg and mix well.
5. Add flaxseed mix and vanilla, beat well (photo #5).
6. Sift together flour, Brewers yeast, baking powder, cinnamon and salt (photo #6).
7. Add dry ingredients to butter mix (photo #7).
8. Stir in oats and chips (or other ingredients) (photo #8).
9. Scoop onto baking sheet (photo #9).
10. Bake for 12 minutes or 10 if you want them softer.
11. Let set for a couple minutes then remove from tray.
